Fish

It's fair to say that fish is not one of my favourite foods, in fact, it understates my general dislike for fish, enormously. That said, there are a few fish dishes that I enjoy occasionally, and also, a few that I am obliged to make by my family.

So, here we go!

Fish Pie

This is about as tasty as fish gets, full of flavour and textures, easy to make, and a delight to eat.

The whole family will enjoy this dish, I even make it without being forced to!

INGREDIENTS

2 medium/large potatoes,

1 onion,

2 or 3 fillets of hake (or any other fish you prefer),

a mixture of various sliced and chopped vegetable of your choice, and peas,

a glass of single cream, (I prefer a 1/2 a glass of single cream and 1/2 glass of milk),

50gr of grated cheese,

a spoonful of sour cream,

2 knobs of butter,

olive oil,

a spoonful of flour,

salt,

dill,

thyme. (if you can get hold lemon thyme all the better.

STEPS

1)Peel and break, or cut, the potatoes into medium sized chunks, then bring them to the boil in a pan of salted water. Boil for 15-20min, until they fall off a fork when pinched.

2)Peel and chop the onion, and gently fry it in a covered frying-pan with a knob of butter and a drizzle of olive oil.

3)When the onion turns transparent, add the vegetables, sprinkle liberally with dill, add a few sprigs of fresh lemon thyme, (normal thyme or ground thyme will do) and continue to gently fry a further five minutes.

4)Once the vegetables are cooked, cut the hake into chunks and add it to the pan.

The hake requires very little cooking and you should only cook it a couple of minutes each side, otherwise it will over-cook in the oven.

5)Add the flour and gently stir to cover all the ingredients without breaking the fish, then add the single cream, continuing to stir gently until you have a smooth and creamy mixture.

6)Remove from the flame and allow to cool.

7)Once the potatoes are boiled, drain and add the butter, sour cream and cheese, then mash until lump free.

8)Allow to cool.

9)Once the mash and the fish filling is cooled, share the fish filling between the bowls, then cover with mash.

10)Place in the centre of a preheated oven at 180°c until golden brown, then remove from the oven and serve piping hot.

Salmon Pie

I was wrong! THIS IS AS TASTY AS FISH GETS!!!

Delicious salmon in a creamy, buttery, vegetable sauce, impregnated with the subtle flavour of dill.

This really is a delight to eat and make.

Easy, very tasty, and surprisingly fast.

Doesn't even need accompanying, it's brilliant, and filling enough, all on it's own.
