Spaghetti with bacon and mushrooms


Spaghetti with bacon and mushrooms in less than twenty minutes, what more can you ask for?

Super easy, tasty and economical.

Perfect for those quick lunches, or for the kids when time is tight.

INGREDIENTS

spaghetti,

150 gr bacon cut into strips,

tray of mushrooms,

large knob of butter,

250ml single cream,

1 onion,

salt, pepper and olive oil.

STEPS

1)Put the spaghetti in abundant boiling salted-water, and boil on a medium/low heat until "al dente" (cooked but firm to the bite). DO NOT put oil in the water, it serves no purpose as it simply floats to the top.

Whilst the spaghetti boils (10-15 min, depending on the spaghetti you use), peel and dice the onion, and put it in a frying pan with the bacon, to gently fry in the butter and a spoonful of olive oil. Add a pinch of salt.

2)Now, whilst both the spaghetti's and the onions cook, clean and halve the mushrooms (it is best to rub or brush the mushrooms to clean them, washing them will make them less tasty as mushrooms absorb any liquid they are in contact with), then when the onion begins to become transparent (5-6 min), add them to the pan, stir in well, turn up the heat a little and continue frying for 2-3 minutes.

Once the mushrooms start to brown, add the single cream, stir well, lower the flame and leave to simmer gently.

3)The spaghetti should be "al dente" at this point, but if it's not don't worry, the sauce won't spoil whilst it simmers for a few minutes.

When ready, drain and rinse the spaghetti with hot water, then incorporate it into the sauce, continuing to heat while you do so.
