Fajitas for the brave


I dedicate this recipe to my brother Robert and my nephew Andrew, who share my like for spicy food, and this recipe really is not for the faint hearted.

That said, you can always reduce it's spiciness by putting less chilli in it, and less Mexican spices, but then you could also eliminate all the ingredients, fill a glass with water, and drink that!

INGREDIENTS

THE FILLING : THE SAUCE : THE PRESENTATION:

2OOgr minced meat, single cream, tortillas/wraps/flatbread,

1 chorizo, fresh or sour cream, mixed lettuce,

1 red pepper, dill. 2 slices of cheese.

2 chilli peppers,

1 red onion,

Mexican spices,

olive oil,

sugar.

STEPS

1)Slice the red pepper, the chillies and the onion.

Peel and finely chop the chorizo and mix with the minced meat of your choice.

Place the peppers, onion and meats into a resealable bag, seal and shake it in order to mix the ingredients, then add 3 or 4 teaspoons of Mexican spices and two of sugar, re-close the bag and shake again. Pour 4 spoonfuls of olive oil into the bag, and then once again, seal it and shake it well, ensuring that all the ingredients are soaked in oil.

Place in the fridge and leave overnight.

2)Empty the contents of the bag directly into a hot frying pan, and fry over a medium/low flame for 20 min, until most of the oil has been consumed.

3)Whilst the meat cooks, mix equal amounts of single cream and fresh/sour cream in a bowl, then add abundant dill.

The sauce is now ready.

4)Whilst the meat continues to cook, chop the mixed lettuce into smallish pieces, and slice the cheese into strips.

5)Once the meat is cooked, heat the tortillas/wraps/flatbread* in a frying pan without oil (about 30sec. per side), and then all that is left is to start layering on the ingredients:

an abundant coat of sauce;

lettuce;

the meat mix;

the cheese;

a drizzle of the residual oil** from the frying pan,

fold and pour another drizzle of sauce over the top.

*I use Italian flatbread with this recipe because it is thicker and more absorbent, but it really doesn't matter whether you use flatbread, tortillas or wraps, it will be just as delicious.

**The residual oil from the frying pan is incredibly tasty, don't miss out on drizzling it over your fajita mix.

All that is left is to eat, so grab loads of kitchen roll, you're going to need it !!
