Kebabs


Kebabs have become almost a national dish in England, and it's hardly surprising. Tasty, filling and economical, what more can you ask for?

Here I will show you how to make the most of supermarket kebab meat, be it lamb, chicken or beef.

I will also show you how to make a Tzatziki sauce, without using cucumber.

This recipe comes in four stages:

Preparing the meat;

preparing the Tzatziki sauce;

and preparing the salad filling;

Building the kebabs.

THE MEAT

300gr kebab meat of your choice,

1 red chilli,

i red bell-pepper,

1 onion,

salt, pepper, and olive oil.

STEPS

1)Finely slice the chilli pepper, and roughly chop the onion, then place both in a large, covered preheated, frying-pan, add a pinch of salt, to make the onion sweat, and gently fry on a medium/low flame.

2)Whilst the onion and chilli fries, chop the bell-pepper and then add it to the frying-pan. Continue frying for 5-6min, or until the onion becomes transparent and the pepper has softened.

3)Then add the kebab meat to the pan, stir in well and add a pinch of salt and pepper. Cook until evenly browned (4-5min), moving occasionally.

THE SAUCE

2 spoonfuls soft cheese,

2 spoonfuls sour cream,

(fresh cream will do)

100ml single cream,

a spoonful of wine vinegar,and plenty of dill.

STEP

BLEND ALL THE INGREDIENTS TOGETHER!

THE SALAD FILLING

1/2 a tomato,

fresh coriander (optional),

salt, pepper, olive oil.

A bag of mixed lettuce.

STEPS

1)Finely slice half a tomato.(4-5 slices per person)

2)Add a pinch of salt and pepper,

3 Chop a small amount of coriander, and sprinkle it over the top of the tomato.

4)Take a couple of handfuls of mixed lettuce leaves, and tear them into smallish pieces. DO NOT USE A KNIFE!

BUILDING THE KEBABS

3 wraps, flatbreads, or durum flatbreads.

The difference is minimal, so I tend to use what is available, or simply whatever is on offer.

STEPS

1)Heat the wraps for about 30 seconds each side, or until they start to brown. Don't overcook them, or they will become difficult to roll;

2)Add a healthy dollop of tzatziki;

3)Add tomato;

4)Add lettuce leaves;

5)Add a generous portion of the meat mix;

6)Add another dollop of tzatziki;

7)Roll them up tightly;

8)Add yet another dollop of tzatziki!!

9)Cut it in half or it probably won't fit on your plate!

THAT'S IT ! ONE OF THESE BUGGERS SHOULD BE MORE THAN ENOUGH TO SATISFY YOUR APPETITE!
