Crunchy Sweet & Sour Chicken Wings


Tasty, sticky, crunchy, chicken

wings.

What more could you ask for?

This, for your children, is food of the gods.

Easy to make, economical, and full of contrasting textures, all from stuff that most of us have lying around in the fridge.

INGREDIENTS

chicken wings,

2 medium potatoes,

salt and pepper mix,

soya sauce,

ketchup,

sweet chilli sauce,

olive oil.

STEPS

1)Place the wings in a resealable freezer bag, sprinkle a teaspoon of salt and pepper mix* over them, and a healthy drizzle of olive oil. Shake the bag vigorously, making sure the wings are evenly coated, then place them in the fridge for a couple of hours (preferably overnight).

*If you don't have salt and pepper mix, you can make your own following my easy instructions on the "tricks and techniques" page, or simply use a little salt and pepper.

2)When ready to cook, remove the wings from the bag, and arrange them on a baking tray. DO NOT throw the bag away, you are going to use it!

3)Clean and cut the potatoes into small pieces (wedges), then place them into the freezer bag (I told you, you would need it), and shake well to ensure they are evenly coated.

4)Cover the baking tray with foil, then place it in the centre of a preheated oven at 220°c for 25-30 minutes.

5)Whilst the wings are cooking, make the sauce.

Pour equal amounts of sweet chilli sauce and ketchup into a bowl (a couple of spoonfuls of each should be sufficient), then add a drizzle of soya sauce (remember, soya sauce is particularly salty, so don't use too much, you have already coated the wings and the potatoes with salt and pepper.)

6)EMULSIFY.

Yep, that's it, put a lid on the bowl, and shake the hell out of it for about 10 seconds.

7)Place the potatoes on to a separate baking tray. You can throw the bag away now!

8)Remove the wings from the oven, and place the potatoes, uncovered, in their place.

9)Whilst the potatoes are given a quick blast in the oven, dip the wings in the emulsified sauce, giving them a thick coating. Place them back on the tray.

10)Take the potatoes out of the oven, and replace them with the tray of wings. Cook the wings, uncovered, for 15-20 minutes.

11)Cover the tray of potatoes with foil, and place it in the bottom of the oven. I use the foil that I have just taken off the tray of wings, but maybe that is taking home-economy a little far.

12)After 25 minutes, remove both trays from the oven, and dip the wings in the fried onions, yep! the stuff you put on your salads, it's crunchy, really tasty and won't go immediately soft.

If you don't want to use/or haven't got, fried onions, you can crunch-up some Doritos , or similar crisps, and use them instead.
