Russian Salad

Ensaladilla Rusa or Russian Salad, is a staple diet for many tourists when visiting Spain, although it is not, as it's name suggests, a Spanish dish. It was invented in Moscow in 1864, although as usual, the French try to lay claim to it's invention.

It's ingredients are as simple

as it is variable.

You can basically add to it whatever you fancy.

It can be vegetarian, even Vegan, although you need to make a Vegan mayonnaise (simpleveganblog.com/vegan-mayonnaise/), I have however used the more traditional ingredients.

Try it! It will transport you back to your favorite Spanish bar!

INGREDIENTS

1 large potato,

jar of mixed vegetables or frozen mixed vegetables,

1/2 tin of tuna,(in vegetable oil)

4 slices of ham,

mayonnaise,

fresh or sour cream,

salted butter,

tin of red peppers. (to decorate)

STEPS

1)Peel and cut (preferably break*) the potato into largish chunks, then boil it in salted water for about 20 min. (until the potato falls off a fork when pinched).

Drain, and add 2 or 3 knobs of salted butter and a spoon of fresh or sour cream, then mash it.

It is important that your mash is lump free, smooth and creamy, but not runny!

2)Whilst the potato boils, prepare the vegetables according to the manufacturers instructions (this seldom takes more than 3-5 min), then drain them and set them aside to cool.

Once the mash is ready, add the ham (cut into strips or diced), the tuna, and a spoonful of mayonnaise, to the vegetables, mix thoroughly, then add the mash and mix again.

Make a mound of the mix on a dish or plate of your choice.

3)In a separate bowl, mix a heaped spoonful of mayonnaise and a spoonful of fresh or sour cream. This will reduce the tanginess of the mayonnaise, which can be a little overwhelming.

Evenly spread the mayonnaise over the mound of mash, and decorate with whatever you have to hand. I use tinned red peppers and olives, but you can use whatever you fancy, or simply stick breadsticks in it and make it look like a hedgehog for the kids.
