Chicken and Leek Pie

This is a really easy, and superb tasting version of the chicken supreme pie, the subtle taste of the leek blending perfectly with the rich taste of the supreme sauce.
I strongly recommend that you give this a go!

INGREDIENTS
1 chopped leek,
250gr cooked chicken,
1 diced onion,
75gr butter,
a chicken stock cube,
a glass of single cream (250ml),
a spoonful of flour,
salt and olive oil.
A sheet of short-crust pastry,
and an egg.
STEPS
1)Gently fry the onions in a covered, preheated frying-pan, with the butter and a drizzle (no more) of olive oil (the oil will stop the butter from burning), for a couple of minutes, then add the leeks, cover, and continue to fry on a medium/low flame until the onion is transparent, and the leeks are soft.
2)Once the onions are transparent, add the chicken to the pan, sprinkle the stock cube over it, and continue to fry uncovered, for a further 3-5 minutes, stirring or tossing occasional, depending how much of a show-off you are.
3)After the 3-5 minutes have passed, sprinkle the flour over the mixture, stir, and continue to fry for a minute or two (no more, you do not want the flour to stick or brown).
4)Add the single cream, and stir until you achieve a smooth and creamy filling. You do not want it to be thick, so if it is, just add a little milk to thin it.
5)Remove from the flame, cover, and allow to cool for at least half an hour.
6)Whilst the filling cools, defrost the pastry, and beat the egg.
7)When the filling is cool (it will have thickened whilst cooling, so it will be easier to fill the pies), cut the pastry into 3 even strips, extend the pastry a little, and paint the borders with the beaten egg.
8)Place a generous helping of the filling on the bottom half of each strip, being careful not to cover the painted border, then fold the upper half over the filling, sealing the borders, firstly with your fingers, and then with the help of a fork.
9)Egg-wash the pies (paint them with egg), cut two small holes in the centre for steam to escape, sprinkle a little sesame seed over them, and place them on a lined oven-tray.
10)Place the tray in the centre of a preheated oven at 180°c, until golden brown (about 15-20min).
11)TAKE THEM OUT OF THE OVEN AND EAT THEM!!
AS WITH MOST PIES, THE HOTTER THE BETTER!
NOTHING BEATS A PIE FRESH FROM THE OVEN!
