Naan-Bread Pizza

Fed up with soggy pizzas, tasteless fillings and bases, and bored with the same old things. Then try this recipe! Quick, easy, crunchy, and really, really tasty. The whole family will love it!!

THE BASE

Well, I suppose the name will have given you a clue here, Naan-Bread. I use the garlic and coriander naans, but it's a matter of your personal preference, and doesn't effect the process at all.

Heat a large, dry frying-pan, you do not need oil or anything else.

Once the pan is really hot, place the naan-bread, top down, in the pan, cover it with a piece of kitchen roll, then press down hard on it. You can use another pan to do this, if you find it too hot.

By toasting the naan-bread you will ensure that it hardly absorbs the tomato topping, and therefore stop the base from becoming soggy.

The naan bread will be toasted in 20-30 seconds.

Depending on how crunchy you want your pizza, you can either repeat the exercise on the other side of the naan bread, or just leave it to toast when you cook it in the oven.

THE TOMATO TOPPING

Again, this is a matter of personal taste, and what's more, it is convenient to vary the sauce regularly, because no matter how good it is, you will get bored with it in the end.

On this occasion I have used 100ml of finely chopped tomatoes, a pinch of salt, a spoonful of sweet chilli sauce, a spoonful of aromatic oil (peanut or sesame), and a dash of soy sauce. Just place all the ingredients into a seal-able container, and shake the living daylights out of it. This will "emulsify" it (blend it).

THE FILLING

Yes, you guessed it, it's a matter of your personal preferences, and it is convenient to vary the ingredients regularly. My only rule is that you should keep it relatively simple. The temptation is to overload the pizza, but you should resist the temptation. It really is a case of less is more. The fewer ingredients ( within reason) the better and more defined the taste.

On this occasion, and in this order, I have used (per pizza); 1 slice of cheese, halved; 1 slice of boiled ham, sliced and diced; a handful of grated cheese; 1 rasher of bacon, sliced and diced; and finally a liberal amount of oregano.

All that is left, is to place it in the centre of a preheated oven at 180c for about 15min, or basically until it is toasted to your liking.

The naan-bread will be crunchy, perfectly cooked, and delicious.
