Beef Scallopini


It's not exactly rare for your local supermarket to have an offer for thinly cut beef, so take advantage of it, and make these great, tasty, easy and economical scallopini.

This recipe is also appropriate for pork, chicken or veal. The only difference, is that you would normally have to flatten out the other meats.

INGREDIENTS

thinly cut beef steaks,

*potatoes,

*mixed veg,

breadcrumbs,

flour

egg.

*-optional

STEPS

1)Put a spoonful of flour on a plate, beat an egg on an other, and breadcrumbs on an other;

2)Lightly coat the beef in flour;

3)Pass the beef through the egg;

4)Cover the beef with breadcrumbs.

5)Place the breadcrumbed steak in a very hot frying pan, with no more than a drizzle of oil.

Cook on a high flame for 30sec - 1min each side.

THAT'S IT!

Now it's just a matter of what you want to serve them with.

They are ideal with potatoes and veg, and with pasta salad, or you could always just make a sandwich with them.
