Salmon Pie

Really easy to make, fabulous salmon pie with vegetable sauce, touched with the subtle flavour of dill.
I don't often get enthusiastic over fish dishes, but this one is well worth making, and a delight to eat.
It doesn't even need to be accompanied by anything, it's both filling, and tasty enough, to serve as a meal all by itself.
Salmon is not the cheapest of fish, but this is a treat well worth that little extra.
So give it a go, you'll love it!

INGREDIENTS
150-200gr mixed cooked vegetables,
3 fillets of salmon,
spoonful of plain flour,
knob of butter (75gr),
glass of single cream (250ml),
breadcrumbs,
salt, dill, sesame seeds,
sheet of pastry,
an egg.
STEPS
1)Melt the butter in a pan, then add the vegetables and plenty of dill, and heat on a low flame for 3-5 min.
2)Add the flour, and stir well, continuing to heat for about a minute, then add the single cream, and stir until you have a smooth and creamy sauce.
Remove from the flame, and allow to cool.
3)Place the salmon fillets, skin down, into a very hot pan with a drizzle (no more than a drizzle) of olive oil. The pan should be on a medium flame.
DO NOT MOVE OR LIFT THE SALMON FILLETS!! Allow them to do their work!
4)The salmon will start to change colour, becoming a pale pink, starting at the skin, and working upwards. When about a third of the salmon has changed colour it is time to turn them over. Push a fish slice under the skin of the salmon, pressing downwards as you do so. The fillet will probably lift intact, but don't worry if the skin sticks a little, you are going to remove it now anyway.
5)Remove the skin (I told you so), and leave the fillets to cook a further 2 minutes.
6)Remove them from the pan, and reserve them on a plate to cool.
7)Beat the egg.
8)Cut the pastry into three equal strips, perforate the top half of the strips leaving the border untouched. Then, paint around the borders of the whole strip.
9)Sprinkle a little breadcrumbs onto the bottom half of the strips. This will stop the salmon from dampening the pastry while it bakes.
10)Place a fillet of salmon on each strip, then add a generous amount of sauce.
11)Fold the top of the pastry over the filling, sealing the edges by pressing with your fingertips, then seal them again using a fork.
12)Paint the pies with beaten egg, then sprinkle with sesame seeds.
13)Place them in the centre of a preheated oven at 180°c, and bake until golden brown.
REMOVE FROM THE OVEN, AND SERVE!!! AS EASY AS THAT!!
