Roast fillet of duck

Really easy to prepare, Roast Duck. You really don't need any particular cooking skills, just some basic ingredients, a desire to eat well and, of course, fillet of duck!

Give this a go, you'll love it!!!

INGREDIENTS:

1 potato,

1 onion,

1 leek,

a head of garlic,

gravy granules,

salt, pepper, olive oil and butter;

and fillet of duck breast.

STEPS

1)Peel and slice the onion, potato and leek, into thickish slices, and place them into a buttered baking tray;

2)Cut the head of garlic in half, horizontally, then place it in the baking tray, without peeling;

3)Drizzle olive oil over the top of the vegetables, then add a few knobs of butter.

4)Place the baking tray in the bottom of a preheated oven, at 215°c, for 40 minutes.

5)Whilst the vegetables roast, score the fatty side of the duck, and rub salt and pepper into the surface;

6)When the vegetables have been roasting for 20-25min, fry the duck breasts in a hot frying pan, without oil, fatty side down, for 4-5min. Then turn it over and fry the meat side for 1-2 min. Don't worry about placing the duck into a hot frying pan without oil, the duck will release more than enough fat.

7)Place the duck on top of the vegetables, and continue to roast for a further 15-20min. After 15min the duck will be medium/rare, which is generally accepted as the "right" way to cook it, however, as I don't believe there to be a "right" way to cook food, just roast it until it is how you like to eat it!

8)Pour the duck fat into a jug with the gravy granules. You didn't think we were going to waste all that lovely duck fat, did you?

9)Remove the tray from the oven, and allow to rest for about 10min;

10)Drain the fat from the baking tray, into the gravy jug, then add boiling water until you achieve the thickness of gravy you prefer.
