Curried Chicken


This really is very, very easy.

You don't need any special skills, and you don't need a sack-full of ingredients.

I've made them with chips and made a curried gravy to go with it, but the chicken is delicious all by itself!

Give it a go, you won't regret it, but you will repeat it!!

INGREDIENTS

Chicken pieces;

powdered curry mix;

gravy granules;

olive oil.

STEPS

1)Place the chicken pieces into a resealable bag;

2)Add 2-3 spoonfuls of olive oil and 2 teaspoons of curry-powder*;

*There are a lot of curry powders available, so either use one that you particularly like, or make your own using a ready made mix as a base. Have a look at my Tricks and Techniques page for suggestions;

3)Shake the bag well, ensuring that all the chicken pieces are covered with the oil and curry mix;

4)Leave in the fridge overnight.

5)The following day, take the chicken pieces out of the fridge;

6)Chop the chicken wings and organise all the pieces in a baking tray;

7)Drizzle the remaining oil from the bag over the chicken, cover the tray, then place it in a preheated oven at 215c for 30-35 minutes;

8)Remove the cover from the baking tray, and continue cooking for a further 15-20 minutes (until the chicken pieces are golden brown and the skin is crunchy).

9)When the chicken pieces are ready to serve, place a tablespoon of gravy granules and a teaspoon of curry powder into a jug, then add boiling water until you acquire the consistency you require;

I tend to add a little milk, as it enhances the colour and thins the gravy slightly without diluting it's flavour.

10) SERVE !!!

I've served the chicken with chips, but boiled or fried rice are just as good, and every bit as easy to prepare.
