Savoury Pancakes


This is a must try recipe for anyone who likes hot, quick, easy and delicious snacks. That'll be everyone then!

Don't miss the extra treat at the end of the recipe.

I know one person in particular who is going to love this!

INGREDIENTS

crepe mix,

milk,

jar of mixed vegetables,

ham cut into strips,

flour,

butter,

single cream,

stock cube.

NO SALT!

STEPS

1)Drain and rinse the mixed vegetables.

In a medium pan, melt a couple of large knobs of butter over a slow flame.

When the butter is melted, add the vegetables and heat for a couple of minutes, then add the ham and crumble the stock cube over the top (the stock cube can be whatever flavour you prefer, other than fish).

Mix together and continue heating a couple of minutes.

2)Add a spoonful of flour to the mix, stir in and then add the single cream. The mixture should be smooth and creamy.

If the mixture is too thick, add a little milk in order to lighten it.

Leave over a minimum flame whilst you prepare the crepes.

3)Empty the pancake mix into a measuring jug (if the instructions on the packet suggest that you do anything else, ignore them, or you will end up with lumps in the mix).

Add the amount of milk as indicated on the packet, and blend well for about a minute, until you are sure the mixture is totally smooth and there are no lumps.

4)Place a flat bottomed pan over a medium flame. It is important that the pan has a flat base, or the mixture will not spread or cook evenly.

Put a small knob of butter into the hot pan, and wipe it over the surface using kitchen roll.

Pour a little of the mixture into the centre of the pan, then move it immediately in a circular motion so that the mixture spreads evenly over the surface.

IT MAY TAKE YOU A COUPLE OF ATTEMPTS TO GET THE HANG OF THIS, DON'T WORRY, IT'S NORMAL. YOU'LL SOON DISCOVER THAT PUTTING TOO MUCH MIX IN MAKES YOUR PANCAKES TOO THICK, SO USE MODERATION. IT'S BETTER TO HAVE A COUPLE OF SMALL PANCAKES THAN ONE THICK SPONGY PANCAKE.

5)When the pancakes start to bubble (about 20 secs), try lifting the edges. If the lift cleanly, the pancake is ready for turning. Simply flip it over using a spatula, or if you are like me, using your fingers.

That's it. All that is left is to fill the pancakes and roll them up.

I tend to sprinkle a little garam masala over the filling before rolling them up. I find it adds a really special touch, but that is obviously optional.

Now for the extra treat. If you end up with pancake mix left over, you can always make them up and fill them with cream and lashing of chocolate!

Or if you prefer, with jam and cream !!

Okay, I know some of you will go straight to this stage without making the savoury filling, but for those that do make the savoury filling, if you have a little left over I will shortly be posting a recipe that will use it up in a fabulous little treat. SAVOURY SAMOSAS!!
