Stuffed jackets


Stuffed Jackets, one of my favourite lunchtime meals.

Ridiculously easy to make, and incredibly versatile, as you can fill them with whatever you fancy.

Ideal for getting the kids to help you in the kitchen, and even better for those of you who work from home.

It takes a couple of minutes to prepare for the oven, then you can get on with your work while it bakes, then about fifteen minutes to prepare the filling and grill it.

Brilliant!

INGREDIENTS

A potato and whatever else you feel like adding.

Here's what I used this time.

1)Wash and scrub a large potato, massage it with olive oil, then rub salt and pepper mix into the skin.

Place on an oven tray and bake for about an hour at 200-225°c.

2)When baked, remove from the oven, allow to cool a little or, using oven gloves, slice the potato in half (you'll probably find it best to use a bread knife or similar serrated blade).

Scoop the filling out of the skins, and place into a bowl, leaving as little attached to the skins as possible, but without breaking the skin!

Add a knob of butter, a spoonful of fresh or sour cream, a little grated cheese, a pinch of salt and a little pepper.

Mash it all together, until smooth, leaving no lumps.

3)Add a small tin of tuna to the mash and stir in, then fill the skins with the mixture, sprinkle with grated cheese, and return to the oven for 5-10 minutes until it turns golden brown.

4)THAT'S IT! Take it out of the oven, and eat it piping hot! Don't forget to EAT THE SKIN, it is absolutely fantastic!

REMEMBER you can fill these with just about anything, adding corned beef, mayonnaise, sweetcorn, bacon, ham, egg or any of a thousand other things to the mash, you get a fantastic snack or lunch. You don't even need to use the mash. You can set it aside for another meal and fill the skins with something else. I've used them to fill with curry and boiled rice. They work brilliantly!

Oh, by the way, you don't even need to have the oven on for an hour in order to bake a couple of potatoes. I put them in the oven when I am making other things, e.g. Roasting a chicken. I then just quickly make up the mash and set the skins aside or fill them with peas and carrots to go with my chicken roast.
